This week, we’ve chosen to adapt one of Jamie Oliver’s easy-peasy recipes that can be whipped up for a lip-smacking holiday lunch, served poolside. Let’s get cooking…

Jamie Oliver’s Easy Tomato & Olive Crostini

Ingredients:

20 plump cherry tomatoes
1 handful black/green olives
2-3 generous splashes extra virgin olive oil
1 swig balsamic vinegar
Salt
Pepper
Dried chili, crumbled
Crostini (bread)
Baby basil leaves

Dressing (optional):

1 tbs lemon juice
1 tsp crushed garlic
1 tbs honey
3 tbs olive oil

Method:

After shopping up a storm at the Knysna markets, get all your ingredients ready in your holiday kitchen. Take 20 cherry tomatoes and cut them into rough 4cm cubes. Grab a handful of good-quality black or green olives. Remove the stones from the olives and chop finely. Put the olives and tomatoes into a bowl. Add 2 or 3 medium lugs of extra virgin olive oil. Add a swig of balsamic vinegar. Make sure to season carefully with salt, pepper and a teeny bit of crumbled dried chilli. Keep in mind that olives are quite salty already, so seasoning can be mild. Set the mixture aside for a few minutes to marinate together.

Cut your crostini bread into 3cm thick oval slices. Toast or grill in the oven till golden and crisp. Drizzle with a little olive oil. Spoon the tomato and olive mixture over each of your hot Crostini. Sprinkle a few baby basil leaves over the top. Drizzle with dressing. Plate and serve on the patio overlooking the sea. This light snack is also perfect for beach picnics and can be dressed up with a little Mozzarella.
