Holiday Dish – Easy Salmon Devilled Eggs

An easy-to-make holiday dish is just what you need, over the end-of-year period. Courtesy of Jamie Oliver, we’ve chosen to showcase this fabulous party snack, which can be prepped and served in just 30 minutes. Perfect for serving during your holiday or New Year’s Eve bash!

A quick New Year’s Eve holiday dish to impress your guests

Jamie Oliver's Salmon Devilled Eggs are the perfect holiday dish, sure to be the talk of the party!

Jamie Oliver’s Salmon Devilled Eggs:

Ingredients:

8 large eggs (free-range)
25g smoked salmon
4 sprigs fresh dill, (keep aside some extra for serving)
1 pinch of cayenne pepper

For the Mayo:

1 large egg yolk (free-range)
2 teaspoons mustard (Dijon)
Half lemon, (20ml juice)
100ml olive oil
100ml sunflower oil

(Many of the ingredients above can be found at local markets and Fruit & Veg stalls).

Makes 16 units.

Method:

In a saucepan, cover the eggs with cold water and bring to the boil over a high heat.

Simmer for 6min, then drain the eggs and place them in cold water to cool.

Peel the eggs and halve them lengthways, scoop out the yolks (yellow) into a bowl and roughly mash the yolks. Set aside for later.

Make your mayonnaise next. In a bowl, whisk the raw egg yolk, mustard and lemon juice (with an electric whisk) until nice and frothy.

Combine the olive oil and sunflower oil in a jug, then drizzle them into the egg yolk mixture, whisking constantly until combined. Season with sea salt and black pepper.

Add 60g of the mayo to the cooked egg yolks ( you can refrigerate the rest for up to a few days).

Finely chop the salmon and dill and stir into the mashed cooked egg yolks, then add the cayenne pepper and mash to uniformly combine.

Spoon the mashed mixture into the egg whites and top with extra dill. Serve immediately.

No holiday dish would be complete without a glass of wine or bubbly – so lastly, toast to the year ahead!
